\\ ACCIDENTAL AND AWESOME *VEGAN* APPLESAUCE AND CINNAMON PANCAKES //

Rather than make this post ultimately about being broke and having to be creative on a micro-budget and making do with whatever the fuck was in the cupboard, I am instead going to party about how we made these pancakes when there was barely any food in the house and they are totally amazing, like apple cinnamon funnel cake at a fall fair, like magical hot cinnamon doughnuts with a fluffy chewy center and a crisp savory crust. So! Practically free, and I should mention, super easy! Any easier and you’d literally be napping.

INGREDIENTS

2 cups all purpose flour

3 tsp baking powder

1 1/2 tsp baking soda

1/2 tsp salt

1/4 cup sugar 

1 1/2 applesauce

2 cups water

2 tsp ground cinnamon

1 tsp vanilla extract

Shortening OR butter OR bacon grease OR canola oil OR some vegan frying oil I’ve never heard of and don’t care about but godspeed  and you do you, you know? 

METHOD

Combine flour, sugar, baking powder, baking soda, salt. Whisk briskly. Add water, applesauce, vanilla, and cinnamon. Whisk again to combine, and try to flap in some air to the batter, just a little, but don’t worry if the batter seems thick or dense. It won’t have a bunch of bubbles like conventional pancakes, but trust me, they will be fluffy as all get out once you fry them. 

I happened to use bacon grease to fry them up, but whatever you’re using, get it shimmeringly hot before you pour the batter in the skillet. If you’re using butter, make sure it doesn’t burn. Anyway! get it as hot as you can, and pour in about a ladle full. Flip after a couple minutes, once a few air bubbles have surfaced on the underside. Cook that side for about 3 minutes or so, then you’re finished! This recipe makes about 12 pancakes. ALL OF THEM ARE AWESOME. Best thing about it is that since they’re vegan you can save the leftover batter and it won’t spoil. Look how cute! Pancake batter on the fly:

Serve immediately with salty butter, syrup, powdered sugar, cool whip, sour cream. This is a celebration of apples, and cinnamon, but mostly of making something magical out of whatever is in the cupboard. Yay!

  1. I used whole wheat flour but my pan was not heating evenly so the pancakes weren’t cooking evenly and fell apart when I tried to flip them. But anyway, they were good. I think the flavor comes through better when they are cold. They taste more cinnamon-y. Thanks. I hope to try your chocolate chip cookies soon, especially since I have that sea salt you mention. It is extra salty. 🙂
